Functionality and safety

• Large cold zone on the bottom for depositing impurities. • Oil drainage into the drip tray complete with filter inside the compartment via a chrome-plated brass cast drain valve. • Heat sources protected by removable underlying chrome-plated grids. • Thermostat temperature control up to 190°C, plus safety thermostat set-point (230°C), to prevent overheating. Bulbs protected against accidental impact.

Melting system

What differentiates the melting system from a traditional one, apart from the increased thermal reactivity compared to the typical inertia of the mechanical thermostat, is the gradual heating process in the initial cooking phase. The initial pre-heating (up to 100°C) occurs intermittently, preventing solid fats and oil from rapidly melting due to localised overheating.
