Giorik takes its place in another prestigious kitchen, that of Michelin-starred chef Angelo Sabatelli. The eldest of three children, Sabatelli was born into a poor family in Monopoli in 1968; at the age of six he began working in a butcher’s shop and then attended catering college, where he literally discovered his love for cooking by chance. Before settling in Putignano, where he now lives and works, he spent 12 years abroad learning his trade in Jakarta, Hong Kong, Shanghai and Mauritius, gaining first-hand experience of Asian aromas and spices which he would later blend so skilfully with local ingredients. He returned to Italy in 2007 and opened his eponymous restaurant, which was awarded its first Michelin star in 2013.
