Babu is a contemporary pastry shop which serves up a host of sweet and savoury creations. The name of this innovative business is a combination of the first letters of the owners’ surnames - Barbiero and Busatta - and it is located in Vicenza, one of the many beautiful towns in the Veneto region and famous for being the gold capital of Italy, thanks to its ancient goldsmithing tradition and workshops.
On a par with the craftsmanship of the town’s jewellery is the work of Beatrice Busatta, a young pastry chef who runs the business with her husband and who was named “Emerging Pastry Chef of 2023” in the prestigious Gambero Rosso guidebook.

Babu is a contemporary revisitation of traditional Italian and French patisserie, adapting it to local needs and tastes. One of its go-to products is its peanut, caramel and chocolate creation, but Babu offers more than just fine pastries, thanks to its café and its vibrant, modern weekend brunch menus that are guaranteed to satisfy customers all day long. Want an example? Its savoury french toast and churro french toast, which will “take your taste buds on a whistle-stop world tour”. These two items rely on our PoP oven to ensure they reach the ideal temperature of 65 °C inside, while the outside remains crisp and crunchy, enhancing its texture. The innovative combined cooking system (patent pending) produces a small amount of steam while air is circulated at high speed inside the cooking chamber.
