Nuta restaurant, situated in one of the most attractive locations in Warsaw – the modern and prestigious Ethos building, the new luxury destination in the ultra-central Three Crosses Square – is inspired by the world of music. Its name means “note” and is a nod to the unique composition of taste notes which guests at the restaurant can enjoy. It is also a reference to note-by-note cuisine, the evolution of molecular gastronomy, which was invented and developed by Hervé This and has become Camastra’s signature culinary style. Unlike molecular gastronomy, which focuses primarily on the consistency of food, this highly innovative technique uses pure compounds, which are extracted from naturally occurring ingredients and then cloned in the laboratory, to create dishes, determining their taste, shape and nutritional properties.

Camastra, who is originally from Puglia but perfected his craft in some of the top restaurants around the world, uses the note-by-note technique to create unique sensory experiences for his diners, earning himself prestigious accolades and international awards, as well as a Michelin star for his previous restaurant Senses, also in Warsaw. Just one year after opening Nuta, Andrea Camastra has been named one of the top 50 chefs in Poland by Forbes, currently placed 12th in the ranking. Camastra is a master at blending ultra-modern and traditional techniques and at Nuta the menu is inspired by Polish cuisine with marked Italian and Asian accents. In the open kitchen, as his lucky guests look on, the chef creates a symphony of flavours, just like music - the other great passion of the chef - where one note follows another to produce a melody.
