We don’t think of ourselves as innovators, just people who like to dig deep and lose themselves in traditional flavours.
Its refined menus are based on innovative pairings: northern specialties are married with southern delicacies, while seafood is paired with offerings from the mountains. Like its pork fillet wrapped in pork cheek on a bed of tossed turnip tops with a demi-glace sauce, a culinary experience you won’t forget in a hurry.
Chef Tony says that with the right balance, you can create unique, unforgettable dishes and believes that cooking is not just about following a recipe: it’s a process that requires sensitivity, respect for the ingredients and preparation times.
